Solachi kadi is a well known western specialty. It is a fast to cook snack, as well as a popular traditional sweet dish.
Ingredients for Solachi kadi:
- Coconut Milk-1 can
- Green Chillies-2
- Garlic flakes-5
- Kokam or Sola-5 flakes
- Coriander leaves- a handful
- Salt to Taste
Recipe for Solachi kadi:
- First dissolve Kokam flakes in about 4-5 tablespoons of water in a vessel. At the end of this the water will become deep pink in color.
- Grind the coconut into a paste with the garlic flakes, a chili and a few kokam fruits.
- Put all the other ingredients in the mixer, and crush. You can add some water to make a smooth batter. Grind for 2-3 minutes, so that all the ingredients are mixed well.
- When the paste is smooth, extract the coconut milk.
- Now, add the coconut milk to the extract of Kokam and sieve the liquid.
- Next, add the coconut milk to the kokam water in a pan and heat to thicken.
- Add the finely-chopped chilli and salt to taste. Stir slowly so that the liquid does not boil. Also see that no lumps are formed.
- Heat gently for about five minutes then transfer the mixture to a bowl and allow it to cool in a dry place.
Serving suggestion: Sprinkle some coriander leaves on the top and refrigerate for a couple of hours. This lends it a nice smell. Solachi kadi is usually served with fried fish and rice.
