Upma or uppittu is a vegetarian cuisine having its origin in present day Indian state of Karnataka. Made principally from ‘rava’ (cream of wheat), this delicious and nutritious South Indian preparation is a popular snacks and breakfast food.
Ingredients
Upma is prepared using the following ingredients:
- 1 cup rava (sooji or cream of wheat)
- 1 ¾ cup water
- ¼ cup of chopped vegetables (peas, corn, beans, and carrot)
- 1 medium sized potato chopped into small pieces
- 3 tsp of groundnut
- 3 tsp of cooking oil
- 1 tsp of split black lentil (urad dal)
- 1 tsp of grated coconut
- ½ tsp of gram lentil (chana dal)
- ½ tsp of cumin seed
- 2 green chilies finely chopped
- 1 strip of curry leaves
- Few coriander leaves
- Salt to taste
Preparing Upma
The under mentioned steps are to be followed for preparing uppittu:
- Boil the chopped potatoes and keep them aside;
- Pour oil in a shallow pan and put it on low to medium heat;
- Thereafter add the chopped chilies, black and gram lentils, and curry leaves;
- Wait for the lentila to turn golden, after which add the boiled potatoes, chopped vegetables, and groundnuts;
- Stir continuously till the vegetables and oil mix well;
- Add salt and water to the pan and wait for it to boil;
- When the water comes close to boiling, add rava slowly. Simultaneously stir the mixture in a clockwise direction.
- Stirring has to be done well, or else lumps will form;
- Add little rava or water if necessary;
- After the mixture thickens, keep it on flame for a few minutes
- Garnish with grated coconut and coriander leaves
- Serve hot with chutney and sambar
Upma is liked by young and old alike. It is widely available in all restaurants serving South Indian cuisine.
