Dosa masala originated in Udupi, Karnataka There are three ways of making dosa masala

Introduction

    Main Ingredients-
  • Tur Dal
  • Raw rice
  • Chana Dal
  • Rice flour
  • Green gram Dal
  • Black gram Dal

Dosa masala is a vegetarian dish and is made primarily in Karnataka. There are two important parts of making a dosa masala – one is by making the main dish itself and the other is by making the potato and onion bhaji that goes with it. It may also be regarded as the spicier alternative of the sada or plain dosa.

Making Potato and Onion Bhaji

  • In a pan a tea spoon of oil has to be taken.
  • To it ¼ tea spoon of mustard seeds, 3 slit green chillies, ½ table spoon of soaked chana dal, a spoon full of coriander leaves, 3 broken red chillies and 2 sliced onions should be added. This has to be fried for 5 minutes.
  • To this turmeric powder, salt, cooked potatoes and finely chopped coriander leaves should be added.
  • This has to be cooked for five minutes more.

Making Dosa Masala

There are three methods of making dosa masala. Main ingredients in the first method are:

  • 50 grams of Tur Dal
  • 500 grams of raw rice
  • 50 grams of Chana Dal
  • 100 grams of rice flour
  • 50 grams of Green gram Dal
  • 1 table spoon sugar
  • 50 grams Black gram Dal (Urid Dal)
  • 1 table spoon of fenugreek seeds

The following procedures are used while making dosa masala in the first process:

  • All the ingredients need to be mixed and soaked for 5 to 6 hours.
  • These have to be ground to a smooth paste and kept away for a night.
  • During the morning a table spoon of sugar and 100 grams of rice flour has to be added to it.
  • The tawa has to be heated and sprinkled with water.
  • A ladle of the batter has to be spread on the tawa as a thin layer. It has to be closed and cooked for a minute. A tea spoon of oil needs to be spread along the center and sides of the tawa. Two table spoons of the potato and onion bhaji have to be placed in the dosa and it has to be folded into half.
  • The dosa is ready and can be served warm along with coconut chutney.

In the second method the ingredients are:

  • 1 cup of black gram dal (urid dal)
  • ¾ cup of beaten rice
  • 4 cups of raw rice
  • a cup of rice flour
  • ¾ cup of boiled rice
  • 2-tea spoon of fenugreek seeds

Following procedures are followed in this case:

  • All the ingredients have to be mixed and soaked for 5 to 6 hours.
  • These have to be ground to a smooth paste and kept away for a night.
  • During the morning a cup of rice flour has to be added to it.
  • The tawa has to be heated and sprinkled with water.
  • A ladle of the batter has to be spread on the tawa as a thin layer.
  • It has to be closed and cooked for a minute.
  • A tea spoon of oil has to be placed on the center and sides of the tawa.
  • Two table spoons of the potato and onion bhaji have to be placed in the dosa and it has to be folded into half.
  • The dosa is ready and can be served warm along with coconut chutney.

In the third way of making dosa masala following are the main ingredients:

  • 3 cups of raw rice
  • ½ cup of chana flour
  • 1 cup of dal (black gram, tur and green gram)
  • ½ cup of chiroti rawa.
  • 1 tea spoon of fenugreek seeds

Following is the third process of making dosa masala:

  • The ingredients have to be mixed and soaked for 5 to 6 hours.
  • They have to be ground to a smooth paste and kept away for a night.
  • The tawa has to be heated and water needs to be sprinkled on it.
  • A ladle of the batter needs to be spread on the tawa.
  • This has to be closed and cooked for a minute.
  • A tea spoon of oil has to be spread at the center and sides of the tawa.
  • Two table spoons of the potato and onion bhaji has to be placed in the dosa and it has to be folded into half.
  • The dosa masala is ready and can be served warm along with coconut chutney.
