Indian people are known to love sweet dishes. They prepare innumerable items and love to exchange it among relatives. Some of the popular sweet recipes loved by Indians include kheer, payasam, halwa, jelebi, ghevar, balushahi, mal pua, coconut burfi, kaju barfi, to name a few.
One of these most loved sweet dishes is raabdi. It is a traditional Indian recipe. It is a famous sweet dish, which is prepared in almost every home. It is equally liked by young and old. A preparation from milk and sugar, Raabdi is a dish prepared both in North and South India with little alterations in the process and ingredients. Rabdi is available in the sweet shops; however, it is very easy to make it at home as well.
You can make simple raabdi or add any fruit pulp it. It tastes just delicious and is apt for any festival like Rakhi, Diwali, Durga Puja, Janmasthami and Holi.
Raabdi
Ingredients:
- Milk
- Condensed Milk
- Rose Essence
- Sugar
- Chopped almonds
- Chopped pistachios
- Saffron strands
Procedure of Making Raabdi:
Milk is boiled in a saucepan until it reduces to its 1/4th. Then the flame is lowered and it is boiled for some more time. Slowly, condensed milk is added to the milk. However, you must ensure that milk does not stick to the bottom of the container. Then, sugar is added to it along with rose essence, pistachios and almonds. Remove the saucepan from flame and let the mixture to cool down. Then it is refrigerated and garnished with saffron strands.
Custard Apple Raabdi
Ingredients:
- Pulp of Custard Apple
- Whole milk
- Sugar
- Almonds (chopped)
- Rose petals (chopped)
- Cardamom powder
- Pistachios (chopped)
- Saffron strands
Procedure of Making Custard Apple Raabdi:
Milk is boiled in a wok till it reduces to half, while continuously stirring it. Then sugar is mixed into it, still stirring the milk. After ten minutes, the wok is removed from the gas stove and kept aside. Then slowly, saffron strands are added along with chopped almonds and pistachios. When the mixture cools down, the custard apple pulp is added to it. This sweet recipe is served chilled.
