Steamed rice with curd is a vegetarian South Indian dish. It is simple, easy to make and delicious. Steamed curd rice makes a perfect meal during hot Indian summers. The simplest way to make steamed rice with curd is add plain curd to boiled or steamed rice. Addition of a small quantity of milk and a pinch of salt is optional and is dependent on the person who eats it. Putting a small quantity of mango pickle or a piece of lime makes it more satisfying. A more elaborate recipe is given below.
Cooking steamed rice with curd
Ingredients for cooking
- 2 cups cooked rice
- Half cup milk
- ¾ cup plain curd
- ¼ teaspoon ginger paste
- 1-2 green chillies
- 4-5 curry leaves
- 1 tablespoon chopped cilantro or coriander leaves
- ½ teaspoon salt to taste
Ingredients for seasoning
- ½ teaspoon Bengal gram dal
- 1 tablespoon oil
- ¼ tablespoon mustard seeds
- ¼ tablespoon cumin seeds
- ½ teaspoon black gram or urad dal
- Pinch of asafoetida
Method of preparation
- Slit or chop the chillies
- Chop the coriander leaves
- Cool the rice
- In a pan, heat the oil
- Put in cumin seeds and mustard seeds. Add urad dal and Bengal gram dal after the seeds cease to crackle.
- Fry the mix for 5 seconds
- Take out the pan from the stove and let it cool.
- Mix curd, cooked rice, chopped coriander leaves and salt
- Add seasoning. Mix the ingredients well
- Curd rice is now ready to be eaten. Mango pickle or lime pickle may be added for a heightened state. Chopped grapes, pomegranate seeds, onion and cucumber may also be added.
